As Americans, we seem to have an insatiable appetite for cheese; especially great tasting cheese made by passionate artisanal cheese makers. The enjoyment of hand-crafted artisan cheeses and related cultured dairy products has become part of our mainstream food culture. Cheese is, by the whey, an ancient form of nourishment developed in numerous forms for thousands of years in nearly every country. There are more than 2,000 varieties identified around the world. The making of cheese is magical and often times remarkably simple, even in one's own kitchen.

Mary's next book, Artisan Cheese Making at Home: Techniques & Recipes for Mastering World-Class Cheeses, is an extension of her classes and will be THE comprehensive book about all aspects of making home-crafted artisan cheeses.
